Upon many kind requests here are couple of my raw food recipes in English as well :)
Raw vegan strawberry pie
Step 1. For the base, combine a handful of hazelnuts and couple of medjool dates in your food processor until it becomes a smooth mixture.
Step 2. For the filling, blend strawberry and banana together and lay it on the nut base
Step 3. For the top, place sliced strawberries and blueberries and voila, enjoy!
Fresh mint tea with raw coconut balls
For the mint tea: Pour hot (not boiled) water over fresh mint leaves and a slice of lemon
For the nut balls: In your food processor, place a cup of almonds, 1tbsp goji berries, 1tbsp of chia seeds, 1.5 tbsp of raw cacao, 1 tbsp of carob, 1 tbsp of hemp seeds, 1 tbsp of maca powder, 2-3 medjool dates, couple of dried apricots, zest of 1 organic lemon and orange, 1tbsp of coconut oil and a dash of vanilla and cinnamon and process them until everything is well-combined. Take a chunk out of the mixture, make a ball and roll it into shredded coconut.
Green smoothie and freshly squeezed orange juice :)
For a basic green smoothie in my blender I usually put 1 banana, 1 slice of pineapple, 1 apple or pear, 2-3 celery, handful of swiss chards or kale or any leafy greens of your choice, 2tbsp of flax seed, coconut water or plain water and a tbsp of freshly squeezed lemon. I usually vary the fruits and leafy greens according to seasons.
Fresh fruit infused water
Add any of your favorite fruits e.g. blueberry, lemon, lime, orange, strawberry, raspberry, cucumber to purified water then just keep refilling it. In this case I added a couple of sliced lemons, strawberries and mint leaves. Heavenly refreshing! :)
Raw vegan cheese cake:
Step 1. Make the crust by combining a cup almond (or any other nuts you like), dash Himalayan salt, 1tbsp shredded coconut, 1-2 tbsp coconut oil and 2 medjool dates in food processor. In case you wish to make a cacao base then simply add 1 tbsp of raw cocoa powder to it. Then spread the crust in a pan (I used glass pan)
Step 2. Make the filling by adding 1 cup cashew, 4-5 medjool dates or alternatively 4-5tbsp maple syrup, 1 cup strawberries, half a cup blueberries, 3-4tbsp freshly juiced lemon, 4 tbsp coconut oil, dash of vanilla and cinnamon, 1 tbsp flax seeds and approx 1/2 cup water in your high speed blender and combine them until it becomes completely creamy and smooth. Its consistency should be fairly thick like as of a traditional cheese cake :) Pour and spread the filling on top of the crust and place it in the fridge or freezer for couple of hours until it becomes solid. You can then garnish it with fresh fruits and coconut flakes :)
Chocolate chia pudding with fruits
Mix 1/3 cup chia seeds with 1,5 cup nutmilk, 1tbsp raw cacao, 1tbsp maple syrup, dash of vanilla and cinnamon and put it in the fridge for an hour to thicken. Then use fruits as layers. In this case I used strawberries, blueberries and raspberries.
Cranberry-Pistacho Energy Balls
In your food processor combine 1 cup oat flakes, 1 cup pistachio, 4-5tbsp of pumpkin seeds, 4-5 medjool dates, 1/2tsp miso paste, 1tbsp chia seeds, 1 tbsp sesam seeds and 1tbsp flax seeds and grind them roughly. Then add 1tbsp coconut oil and 1tbsp maple syrup to make it sticky. Roll the balls and you’re ready :) These make an excellent post work-our snack!
Raw taco wraps
It’s an adaptation of Kimberly Snyder‘s recipe. For original recipe click HERE!
I filled my rolls with ground almonds + pecans, chilli, cilantro, cumin and tamari then rolled them into swiss chard leaves. It took me approx 10 minutes to make a batch of these yummy rolls! Super delish!
Afternoon delight
It was a wintry afternoon snack. It contains of a green apple pie smoothie (1 leaves of kale, juice of half a lemon, 2 green apples, 1/2tsp of spirulina or chlorella and camu camu, 1/2tsp cinnamon, cup coconut water and 1-2 medjool dates) and apple slices dipped into hazelnut butter :) An afternoon to remember it was!
Other ways to make a delicious chia pudding are:
Use 1,5 cups any fruit of your choice. (I used raspberry, strawberry, cherry and pineapple here) One of the methods how I go about making these is just to mix and puree the fruits in a blender then pour the mixture into pretty glass containers :) The other one is when I transfer the fruits into a pan and put it on low heat for 5 minutes, add 1/2 agar-agar (it’s a red seaweed and it’s nature’s gelatin that comes originally from the Far-East) and stir it for another 5 min on low heat. I then pour the fruity mixture into glass containers and proceed them into my fridge :) Agar agar will actually make the fruit puree more jelly-like after putting it in the fridge. In the meantime I make the chia pudding by adding 1/3 cup chia to 1.5 cup coconut or rice milk, a dash of vanilla and cinnamon and put it in the fridge too for an hour or so then pour the chia puding over the ‘fruit jelly’. It’s always a hit! One of the easiest way to impress any guests, really!
Tips: I often make it the night I just have to grab it the next morning and take it on the road with me in glass jar :) Enjoy ♥
